Ingredients
- 3 sliced medium size zucchini
- 1 (lb.) can tomatoes
- 1/4 c. minced onion
- 1 Tbsp. butter
- salt and pepper to taste
Method
- Cook onion and butter in covered casserole until tender (about 3 to 4 minutes).
- Add the juice from the tomatoes and reduce by boiling, uncovered, in microwave.
- Add the zucchini and cook until almost tender.
- Add tomatoes and seasonings and cook, covered, until heated through, another 7 minutes.
