Ingredients

  • 600 g ground lamb
  • 1 garlic clove
  • 1 teaspoon cumin
  • 2 teaspoons coriander
  • oil
  • 10 pita breads
  • 200 g tzatziki
  • 3 lettuce leaves
  • 6 tomatoes

Method

  • Preheat the oven to 190C/170C Fan/Gas 5.
  • Mix the lamb with the garlic, cumin, and coriander - it's easiest to use your hands.
  • Season to taste.
  • Shape into 20 small oval balls.
  • Lightly grease a baking tray with the sunflower oil.
  • Put the koftas on the tray, leaving a gap between each one, and cook in the oven for 15 minutes.
  • Cool.
  • Keep in the fridge until ready to pack.
  • Just before you pack the picnic, carefully open out the mini pitta breads to make pockets.
  • Put 2tsp tzatziki, 2 koftas, and some lettuce and tomato into each one.
  • Pack the rest of the tzatziki in a small plastic container and serve with a selection of vegetable sticks.
