Ingredients
- 1 box (9 Oz. Size) Frozen Artichoke Hearts, Thawed, Divided
- 1/2 cups Crumbled Feta Cheese, Divided
- 1 clove To 2 Cloves Garlic, Minced
- 1 whole Lemon, Juice And Zest
- 2 teaspoons Water
- 1/2 cups Oil-packed Sun-dried Tomatoes, Chopped Into Bite Sized Pieces
- 1/2 cups Basil Leaves Torn
- Freshly Ground Pepper, to taste
- Pita Chips Or Slices Of Bread For Serving
Method
- Fit a food processor with a metal blade and pulse together half of the artichoke hearts, half of the feta cheese, the garlic, lemon juice and zest, and water until smooth.
- In a mixing bowl, stir together the pureed mixture with the remaining artichokes, feta, sun-dried tomatoes, basil, and freshly ground black pepper.
- Taste and adjust seasonings if necessary.
- This may be eaten immediately, but it improves dramatically if allowed to rest, tightly covered, in the refrigerator overnight.
