Ingredients

  • 1 box (9 Oz. Size) Frozen Artichoke Hearts, Thawed, Divided
  • 1/2 cups Crumbled Feta Cheese, Divided
  • 1 clove To 2 Cloves Garlic, Minced
  • 1 whole Lemon, Juice And Zest
  • 2 teaspoons Water
  • 1/2 cups Oil-packed Sun-dried Tomatoes, Chopped Into Bite Sized Pieces
  • 1/2 cups Basil Leaves Torn
  • Freshly Ground Pepper, to taste
  • Pita Chips Or Slices Of Bread For Serving

Method

  • Fit a food processor with a metal blade and pulse together half of the artichoke hearts, half of the feta cheese, the garlic, lemon juice and zest, and water until smooth.
  • In a mixing bowl, stir together the pureed mixture with the remaining artichokes, feta, sun-dried tomatoes, basil, and freshly ground black pepper.
  • Taste and adjust seasonings if necessary.
  • This may be eaten immediately, but it improves dramatically if allowed to rest, tightly covered, in the refrigerator overnight.
