Ingredients

  • 4 tablespoon Olive Oil
  • 2 tablespoon butter
  • 1 cup onions
  • .5 cup celery
  • 2 cloves garlic
  • 16 ounces tomato sauce
  • 12 ounces tomato paste
  • 4 tablespoons grated parmesan
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • .5 teaspoon black pepper
  • 2 piece bay leaves
  • 2 teaspoons fennel seeds

Method

  • In a large skillet, melt butter with the oil.
  • Add the onion, celery and garlic and saute until soft and transparent.
  • Add tomato sauce and tomato paste and stir until smooth.
  • Add remaining ingredients and bring to slow simmer.
  • Simmer for 30-60 minutes (or not at all depending on your taste and time frame).
