Ingredients

  • 4 cube steaks or pork chops
  • 1/2 c. flour
  • 1/2 c. vegetable oil
  • seasoned salt and pepper to taste
  • 1 medium onion, sliced
  • 1 box Spanish Rice-A-Roni, prepared according to directions on box
  • 1 can stewed tomatoes
  • 1 tsp. sugar
  • 1 tsp. parsley flakes

Method

  • Preheat oven to 325°.
  • Beat and tenderize meat.
  • Dredge meat in flour.
  • In a large skillet, brown meat in oil.
  • Remove to a 9 x 9 x 2-inch baking dish.
  • Sprinkle with seasoned salt and pepper. Saut onion slices in skillet drippings; add prepared Spanish Rice-A-Roni and sugar.
  • Pour rice mixture over meat.
  • Sprinkle with parsley flakes.
  • Bake, covered, at 325° for 35 minutes, then uncovered for 20 minutes longer.
