Ingredients

  • 1 cup raw cashews
  • 3 Tbs. lime juice
  • 2 Tbs. dehydrated minced onion
  • 2 tsp. grated lime zest
  • 3/4 tsp. kosher salt
  • 1/2 tsp. chipotle chile powder
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cumin
  • 1/2 tsp. garlic powder

Method

  • Place cashews in large bowl, and cover with 4 cups boiling water.
  • Cover with clean dish towel, and let soak 6 hours.
  • Drain, and rinse cashews.
  • Blend cashews with remaining ingredients and 1 Tbs.
  • cold water in blender or food processor 5 minutes, or until smooth.
  • Chill 3 hours before serving.
