- 1 cup raw cashews
- 3 Tbs. lime juice
- 2 Tbs. dehydrated minced onion
- 2 tsp. grated lime zest
- 3/4 tsp. kosher salt
- 1/2 tsp. chipotle chile powder
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/2 tsp. garlic powder
Method
- Place cashews in large bowl, and cover with 4 cups boiling water.
- Cover with clean dish towel, and let soak 6 hours.
- Drain, and rinse cashews.
- Blend cashews with remaining ingredients and 1 Tbs.
- cold water in blender or food processor 5 minutes, or until smooth.
- Chill 3 hours before serving.
