Ingredients
- 1 lb. yellow squash
- 1/2 stick margarine
- 1 tsp. sugar
- 1 egg
- 1/2 c. mayonnaise
- 1 c. grated cheese, divided
- 1/2 c. chopped pecans
Method
- In a saucepan, boil sliced squash in salted water until tender.
- Drain.
- Add butter and mash.
- Combine sugar, egg, mayonnaise and 1/2 cup cheese.
- Stir into squash.
- Pour into a 9-inch greased casserole dish.
- Sprinkle remaining cheese and pecans over top. Bake at 350° for 30 to 40 minutes or until lightly browned and cheese is melted.
