Ingredients

  • 1 lb. yellow squash
  • 1/2 stick margarine
  • 1 tsp. sugar
  • 1 egg
  • 1/2 c. mayonnaise
  • 1 c. grated cheese, divided
  • 1/2 c. chopped pecans

Method

  • In a saucepan, boil sliced squash in salted water until tender.
  • Drain.
  • Add butter and mash.
  • Combine sugar, egg, mayonnaise and 1/2 cup cheese.
  • Stir into squash.
  • Pour into a 9-inch greased casserole dish.
  • Sprinkle remaining cheese and pecans over top. Bake at 350° for 30 to 40 minutes or until lightly browned and cheese is melted.
