Ingredients
- 8 c. sliced squash
- 2 c. sliced onions
- 1 Tbsp. salt
- 1/2 c. diced green peppers
- 1 c. cider vinegar
- 1 3/4 c. sugar
- 1/2 tsp. celery seed
- 1/2 tsp. dry mustard
Method
- Combine squash and onions.
- Sprinkle with salt and let stand 1 hour.
- Combine green pepper, vinegar, sugar, celery seed and mustard seed.
- Bring this to a boil.
- Add squash and onion; let simmer, then return to a boil.
- Pack pickles into hot, sterilized jars.
- Cover with vinegar mixture and seal.
- Yield: 2 quarts.
