Ingredients

  • 4 (about 2 pounds) sweet potatoes
  • 1/3 cup Land O Lakes Cinnamon Sugar Butter Spread, melted
  • 2 tablespoons orange juice
  • 2 teaspoons country-style Dijon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Land O Lakes Cinnamon Sugar Butter Spread, as desired

Method

  • Heat oven to 400F.
  • Prick sweet potatoes with fork.
  • Bake 50-55 minutes or until soft.
  • Cool slightly on cooling rack.
  • Cut lengthwise slit in potatoes almost all the way through, leaving about 1 inch at each end intact.
  • Scoop out flesh, leaving 1/2-inch border on skins.
  • Place flesh into bowl; add all remaining ingredients.
  • Beat at medium speed until smooth.
  • Spoon mashed potato mixture evenly into skins.
  • Bake 15-20 minutes or until heated through.
  • Top with Cinnamon Sugar Butter Spread, as desired.
