Ingredients
- 1/2 c. margarine
- 3/4 c. chopped green peppers
- 1/3 c. onion
- 3 eggs, beaten
- 1 (7 oz.) can cream-style corn
- 1 (7 oz.) can whole kernel corn (with liquid)
- 8 1/2 oz. pkg. corn muffin mix
- 1 c. Cheddar cheese, shredded
Method
- Preheat oven to 350°. Saute green peppers and onions in margarine. Combine with remaining ingredients, except cheese. Pour into greased 2-quart casserole and sprinkle with cheese. Bake 45 to 55 minutes. Let stand 5 minutes before serving.
