Ingredients

  • 40 g (1½ oz) butter
  • 2 garlic cloves, finely chopped
  • 150 g (5½ oz) walnuts, finely chopped
  • 1 tablespoon finely chopped sage leaves
  • 250 g (9 oz) mascarpone cheese
  • 50 g (½ cup) freshly grated Parmesan cheese
  • 1 tablespoon chopped parsley

Method

1. Heat the butter in a saucepan over medium heat, add the garlic, walnuts and sage and sauté for 4 minutes, or until the garlic is golden. Reduce the heat to low and stir in the mascarpone and Parmesan for 2 minutes, or until the cheese has melted into a rich, smooth sauce.

2. Toss through the hot pasta, season to taste with salt and freshly ground black pepper. Sprinkle with parsley, then serve immediately.
