Ingredients
- 3 c. cooked rice (1 c. wild, 1 c. brown and 1 c. white)
- large onion, finely chopped
- 1 carrot, shredded or diced
- 2 ribs celery, chopped
- 1 stick butter
- 1 c. flour
- 8 c. chicken broth
- 1 c. light cream or half and half
Method
- Saute onion, carrot and celery in the butter.
- Add flour to thicken, then add chicken broth.
- Next, add rice; mix.
- Lastly add cream; do not boil.
- Cook slowly for up to 2 hours.
- A crock-pot works well on low heat for the 2 hour cooking.
