Ingredients

  • 1 1/4 cups all purpose flour
  • 2/3 cup sugar + 1 tbsp
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 4 None eggs
  • 3/4 cup yogurt
  • 1/2 cup sour cream
  • 1/2 cup oatmeal
  • 1/2 tsp ground cinnamon
  • 12 oz prunes, stoned
  • 2 tbsp oil

Method

  • Preheat the oven to 400°F. Mix the flour, 2/3 cup of sugar, the vanilla extract, baking powder and salt in a mixing bowl. Add the eggs, yogurt and sour cream and mix it into a smooth dough with the whisk of a hand mixer.
  • Mix the oatmeal, 1 tbsp of sugar and the cinnamon in a bowl. Transfer the dough into a greased and floured loaf pan (10 inches long, 6 cup volume). Distribute the prunes evenly over the dough, drizzle the oil over them and sprinkle with half of the oatmeal mixture. Bake the loaf for 50-60 mins. After about 25 mins, sprinkle the rest of the oatmeal mixture over the top and with 25 mins to go, cover the loaf with foil.
  • Take the cake out of the oven and let it cool on a wire rack for about 40 mins. Turn the loaf out of the pan and leave it to cool. Slice the loaf and serve it with whipped cream.
