Ingredients
- 6 c. sliced zucchini, about 5 medium cut crosswise into 1/4-inch slices
- 1/2 c. (1 stick) butter, melted
- 1 pkg. (8 oz.) herb-seasoned stuffing mix
- 1 c. shredded raw carrots
- 1/4 c. chopped onion
- 1 can (10 3/4 oz.) cream of mushroom soup
- 1 c. sour cream
Method
- In saucepan with steamer basket, steam zucchini over boiling water until just tender, 3 to 5 minutes.
- Do not overcook. Meanwhile in mixing bowl, combine melted butter and stuffing mix. Spread half of mixture over bottom of 13 x 9-inch pan.
- In another bowl, combine zucchini, carrots, onion, soup and sour cream.
- Spoon vegetable mixture over stuffing in baking pan.
- Cover with remaining stuffing mix.
- Bake, uncovered, at 350° for 30 minutes.
