Ingredients

  • 6 c. sliced zucchini, about 5 medium cut crosswise into 1/4-inch slices
  • 1/2 c. (1 stick) butter, melted
  • 1 pkg. (8 oz.) herb-seasoned stuffing mix
  • 1 c. shredded raw carrots
  • 1/4 c. chopped onion
  • 1 can (10 3/4 oz.) cream of mushroom soup
  • 1 c. sour cream

Method

  • In saucepan with steamer basket, steam zucchini over boiling water until just tender, 3 to 5 minutes.
  • Do not overcook. Meanwhile in mixing bowl, combine melted butter and stuffing mix. Spread half of mixture over bottom of 13 x 9-inch pan.
  • In another bowl, combine zucchini, carrots, onion, soup and sour cream.
  • Spoon vegetable mixture over stuffing in baking pan.
  • Cover with remaining stuffing mix.
  • Bake, uncovered, at 350° for 30 minutes.
