Ingredients
- 2 c. sugar
- 3/4 c. butter or margarine
- 1 tsp. baking soda
- 1 c. buttermilk
- 1 tsp. vanilla
- 2 c. chopped pecans
Method
- Combine sugar, buttermilk, soda and butter.
- Cover with plastic wrap.
- Punch holes in wrap and microwave 2 1/2 minutes on High.
- Stir and turn dish.
- Continue cooking for 15 minutes, stirring every 5 minutes.
- Return to oven to 2 minutes or longer (until soft ball forms in cold water).
- Add vanilla and beat with electric mixer until soft peaks form.
- Add pecans and beat until thick enough to spread in a buttered 12 x 7-inch dish.
- Cool and cut in pieces.
