Ingredients

  • 2 c. sugar
  • 3/4 c. butter or margarine
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 2 c. chopped pecans

Method

  • Combine sugar, buttermilk, soda and butter.
  • Cover with plastic wrap.
  • Punch holes in wrap and microwave 2 1/2 minutes on High.
  • Stir and turn dish.
  • Continue cooking for 15 minutes, stirring every 5 minutes.
  • Return to oven to 2 minutes or longer (until soft ball forms in cold water).
  • Add vanilla and beat with electric mixer until soft peaks form.
  • Add pecans and beat until thick enough to spread in a buttered 12 x 7-inch dish.
  • Cool and cut in pieces.
