Ingredients

  • 2 pkg. frozen broccoli, steamed
  • 2 c. cooked chicken or turkey, cubed
  • 2 cans cream of chicken soup, undiluted
  • 2/3 c. mayonnaise
  • 1 tsp. lemon juice
  • 1/2 tsp. curry powder
  • 2/3 c. Cheddar cheese, shredded
  • 1/2 c. fine, dry bread crumbs, mixed with 1 Tbsp. melted butter

Method

  • Mix mayonnaise, lemon juice, curry and soup.
  • Stir in chicken. Layer broccoli in the bottom of an 8 x 10 or 9 x 12-inch baking dish. Cover with the chicken mixture, then sprinkle with the cheese and finally with the bread crumbs.
  • Bake at 350° for 30 to 40 minutes until bubbly around the edges.
  • Serves 6.
