Ingredients

  • 3/4 lb. beef tenderloin
  • 1/2 c. beef stock
  • 1 Tbsp. cornstarch
  • 1 Tbsp. soy sauce
  • 1 Tbsp. dry sherry
  • 4 Tbsp. olive oil
  • 1 lb. broccoli florets
  • pinch of red pepper flakes
  • salt

Method

  • Cut beef into strips 1-inch long, 1/4-inch thick and 1/2-inch wide; set aside.
  • In a small cup, stir together stock, cornstarch, soy sauce and sherry; set aside.
  • In a heavy skillet, heat 2 tablespoons oil until very hot.
  • Add broccoli, then toss and stir for 2 minutes.
  • Cover and cook for 2 minutes more over medium heat; remove to side dish.
  • Return skillet to high heat and add remaining 2 tablespoons oil and heat until smoking hot.
  • Add beef and cook 2 minutes.
  • Stir in stock mixture and add along with broccoli.
