Ingredients

  • 1 1/2 c. dry black beans
  • 1 to 2 bay leaves
  • 1 tsp. chili powder
  • 1 heaping tsp. cumin
  • 3/4 to 1 small onion
  • 1 to 2 cloves garlic, minced
  • 1 1/2 tsp. soy sauce or to taste
  • 1 c. salsa
  • 1/3 c. chopped cilantro
  • 1 small jar chopped pimientos or equivalent red pepper
  • 1 can white Shoe Peg corn

Method

  • Soak beans for 8 hours; simmer with bay leaves until tender, drain and rinse.
  • Stir all ingredients together except corn; stir in corn 1 hour prior to serving.
