- 1 1/2 c. dry black beans
- 1 to 2 bay leaves
- 1 tsp. chili powder
- 1 heaping tsp. cumin
- 3/4 to 1 small onion
- 1 to 2 cloves garlic, minced
- 1 1/2 tsp. soy sauce or to taste
- 1 c. salsa
- 1/3 c. chopped cilantro
- 1 small jar chopped pimientos or equivalent red pepper
- 1 can white Shoe Peg corn
Method
- Soak beans for 8 hours; simmer with bay leaves until tender, drain and rinse.
- Stir all ingredients together except corn; stir in corn 1 hour prior to serving.
