Ingredients

  • 3/4 cup uncooked long grain white rice
  • 2 cups of water
  • 1 cup of thick style salsa
  • 8 ounces smoked sausage or kielbasa
  • 1 16 ounce can of Black-eyed peas, drained
  • 1 cup of whole kernel corn
  • 2 dashes of ground red pepper

Method

  • Mix rice and water in a 4 quart saucepan and heat to boiling.
  • Reduce heat, cover and simmer for 10 minutes, stirring occasionally.
  • Stir in salsa, sausage, red pepper, peas and corn.
  • Cook uncovered 10 minutes, stirring frequently until heated through.
