Ingredients
- 3/4 cup uncooked long grain white rice
- 2 cups of water
- 1 cup of thick style salsa
- 8 ounces smoked sausage or kielbasa
- 1 16 ounce can of Black-eyed peas, drained
- 1 cup of whole kernel corn
- 2 dashes of ground red pepper
Method
- Mix rice and water in a 4 quart saucepan and heat to boiling.
- Reduce heat, cover and simmer for 10 minutes, stirring occasionally.
- Stir in salsa, sausage, red pepper, peas and corn.
- Cook uncovered 10 minutes, stirring frequently until heated through.
