Ingredients

  • 1/2 cup margarine softened, or butter
  • 1/2 cup canola oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour milk
  • 1/2 tablespoon baking powder
  • 1 tablespoon baking soda
  • 2 1/2 cups whole wheat flour
  • 4 tablespoons cocoa powder
  • 1/2 tablespoon cinnamon
  • 1/2 tablespoon cloves, ground
  • 1/2 cup walnuts or any other kind of nuts
  • 3/4 cup chocolate chips (semi-sweet)
  • 2 cups zucchini shredded

Method

  • Preheat oven to 350F (180C).
  • Cream together first 3 ingredients.
  • Add eggs, vanilla and sour milk.
  • Add dry ingredients in order.
  • Stir in zucchini, chocolate chips and nuts (if using).
  • Pour equally into two greased loaf pans.
  • Bake for one hour and the edges are dark and theirs a split down the middle.
