Ingredients

  • 1 eggplant
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 can tomatoes
  • 1 small green pepper, chopped
  • 1 small onion, chopped
  • 1 tsp. salt
  • 1 Tbsp. brown sugar
  • 1 c. corn bread crumbs
  • 1/2 c. grated cheese

Method

  • Peel eggplant, slice and cook until tender, then mash.
  • In a saucepan, melt butter.
  • Blend in flour.
  • Add tomatoes, pepper, onion, salt, brown sugar and bread crumbs.
  • Mix well and add mashed eggplant.
  • Place in a casserole and top with grated cheese. Bake at 375° about 30 minutes.
