Ingredients

  • 1/4 c. butter, melted
  • 1/2 c. sugar
  • 1 egg, beaten
  • 1/2 c. milk
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon extract
  • maraschino cherries
  • 1 1/2 c. flour
  • 1 tsp. double-acting baking powder
  • 1/4 tsp. salt
  • 1/2 c. flaked coconut
  • coconut (extra for decorating)

Method

  • In a large bowl, mix sugar and butter together.
  • Add well beaten egg, milk, vanilla and lemon extract.
  • Mix well, then mix with dry ingredients except coconut.
  • After all stirred up, add coconut.
  • Spoon out 1 teaspoon of cookie dough on greased cookie sheets.
  • Shape and sprinkle a little coconut on them and put cherries in middle.
  • Bake at 375° for 10 minutes.
