Ingredients
- 3 cans pinto beans
- 3 jalapeno peppers
- 1 medium onion
- 1 clove garlic
- 1 Tbsp. oil
Method
- Finely chop the onion and peppers and mince the garlic.
- Saute in 1 tablespoon oil in a Dutch oven.
- Drain the pinto beans, reserving the fluid.
- Add beans to onion, pepper and garlic and simmer for about 1 hour.
- Mash beans.
- If beans are dry, add reserved fluid.
- Use mixture for burritos, nachos, etc.
