- 2 Tablespoons Flax Seed Meal
- 4 Tablespoons Water
- 1 cup Butter
- 1 cup Sugar
- 1 cup Brown Sugar, Firmly Packed
- 2 whole Eggs
- 1 teaspoon Vanilla
- 2 cups Flour
- 3 Tablespoons Brewers Yeast
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 3 cups Oats
- 1 cup Chocolate Chips
Method
- Preheat oven to 350 degrees. Mix the flax seed meal and the water and let sit for 3-5 minutes. Combine butter and sugars in a large mixing bowl and beat well. Add eggs, and beat more. Add flax seed meal and vanilla and beat well.
- In a medium bowl, whisk together flour, brewer's yeast, baking soda and salt. Slowly add dry ingredients to the butter mixture, mixing well. Stir in oats and chocolate chips. Use a cookie scoop or spoon to drop dough on a cookie sheet. Bake 12 minutes and let sit on the cookie sheet a couple minutes before transferring to a wire rack for cooling.
