Ingredients

  • 1 c. firmly packed brown sugar
  • 1 Tbsp. flour
  • 1 Tbsp. pumpkin pie spice (or use 1 1/4 tsp. cinnamon, 1/2 tsp. ginger and 1/4 tsp. cloves)
  • 1/2 tsp. salt
  • 2 c. pumpkin
  • 1 2/3 c. Pet evaporated milk
  • 1 egg, slightly beaten
  • 2 (9-inch) pie crust shells

Method

  • Set
  • oven at 375°.
  • Mix sugar, flour, spice and salt in a 3-quart mixing bowl.
  • Add the pumpkin, milk and egg and stir until smooth.
  • Pour
  • into
  • the unbaked shells.
  • Bake 40 to 45 minutes, or until a knife comes out clean 2-inches from edge. Serve warm or cold.
  • One pie serves 6.
