Ingredients
- 1 c. firmly packed brown sugar
- 1 Tbsp. flour
- 1 Tbsp. pumpkin pie spice (or use 1 1/4 tsp. cinnamon, 1/2 tsp. ginger and 1/4 tsp. cloves)
- 1/2 tsp. salt
- 2 c. pumpkin
- 1 2/3 c. Pet evaporated milk
- 1 egg, slightly beaten
- 2 (9-inch) pie crust shells
Method
- Set
- oven at 375°.
- Mix sugar, flour, spice and salt in a 3-quart mixing bowl.
- Add the pumpkin, milk and egg and stir until smooth.
- Pour
- into
- the unbaked shells.
- Bake 40 to 45 minutes, or until a knife comes out clean 2-inches from edge. Serve warm or cold.
- One pie serves 6.
