- 1 1/2 c. dry Navy beans
- 6 c. cool water
- 1 c. onions, minced
- 4 ounce. salt pork or possibly ham, cubed
- 1/2 clove garlic, minced
- 2 c. celery, minced
- 1 c. carrots, diced
- 2 whole cloves garlic
- 2-4 tbsp. cider vinegar
- Dash of pepper
- 4 c. beef or possibly chicken stock
- 2 bay leaves
Method
- Cover beans well with water and soak several hrs or possibly overnight.
- Then pour off and measure water, adding sufficient to make 6 c.. Add in beans.
- Saute/fry onions, salt pork or possibly ham and garlic till onions are transparent.
- Combine all ingredients, except vinegar, in heavy kettle.
- Cover and simmer 4 hrs or possibly till beans are soft.
- Add in vinegar, salt and more pepper.
- Makes 8-12 servings.
