Ingredients

  • 1 1/2 c. dry Navy beans
  • 6 c. cool water
  • 1 c. onions, minced
  • 4 ounce. salt pork or possibly ham, cubed
  • 1/2 clove garlic, minced
  • 2 c. celery, minced
  • 1 c. carrots, diced
  • 2 whole cloves garlic
  • 2-4 tbsp. cider vinegar
  • Dash of pepper
  • 4 c. beef or possibly chicken stock
  • 2 bay leaves

Method

  • Cover beans well with water and soak several hrs or possibly overnight.
  • Then pour off and measure water, adding sufficient to make 6 c.. Add in beans.
  • Saute/fry onions, salt pork or possibly ham and garlic till onions are transparent.
  • Combine all ingredients, except vinegar, in heavy kettle.
  • Cover and simmer 4 hrs or possibly till beans are soft.
  • Add in vinegar, salt and more pepper.
  • Makes 8-12 servings.
