Ingredients
- 70 Ritz crackers (2 packs)
- 1 c. chopped pecans
- 1 1/2 c. milk
- 1/2 gal. vanilla ice cream
- 8 oz. Cool Whip
- 1 small can coconut
- 1 stick melted margarine
- 2 pkg. vanilla instant pudding
Method
- Mix crushed crackers, coconut, pecans and butter to make crust. Reserve some for topping.
- Put crust in a 9 x 13-inch pan.
- Mix softened ice cream, milk, and pudding to form middle layer.
- Spread over crust.
- Chill.
- Spread Cool Whip over and sprinkle reserved topping on top.
- Chill and serve.
- Keep refrigerated.
