Ingredients

  • 70 Ritz crackers (2 packs)
  • 1 c. chopped pecans
  • 1 1/2 c. milk
  • 1/2 gal. vanilla ice cream
  • 8 oz. Cool Whip
  • 1 small can coconut
  • 1 stick melted margarine
  • 2 pkg. vanilla instant pudding

Method

  • Mix crushed crackers, coconut, pecans and butter to make crust. Reserve some for topping.
  • Put crust in a 9 x 13-inch pan.
  • Mix softened ice cream, milk, and pudding to form middle layer.
  • Spread over crust.
  • Chill.
  • Spread Cool Whip over and sprinkle reserved topping on top.
  • Chill and serve.
  • Keep refrigerated.
