Ingredients

  • 1 lb. fresh shrimp
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter (optional)
  • 2 cloves garlic, minced
  • 1 Tbsp. parsley, chopped
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. lemon juice
  • Parmesan cheese
  • cooked pasta for 4 servings

Method

  • Rinse shrimp; remove shells, leaving tails, if desired.
  • Heat oil and butter in large skillet.
  • Add garlic; cook slowly until golden.
  • Add shrimp.
  • Sprinkle with parsley, oregano, salt and pepper.
  • Cook over medium heat, stirring, for 3 or 4 minutes, until shrimp are pink.
  • Sprinkle with lemon juice; stir until hot.
  • Serve over pasta; sprinkle with grated Parmesan cheese.
  • Pass cheese when serving.
  • Serve with a green salad and good, crusty bread.
  • Good, fast company meal.
