Ingredients
- 1 lb. fresh shrimp
- 2 Tbsp. olive oil
- 2 Tbsp. butter (optional)
- 2 cloves garlic, minced
- 1 Tbsp. parsley, chopped
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. lemon juice
- Parmesan cheese
- cooked pasta for 4 servings
Method
- Rinse shrimp; remove shells, leaving tails, if desired.
- Heat oil and butter in large skillet.
- Add garlic; cook slowly until golden.
- Add shrimp.
- Sprinkle with parsley, oregano, salt and pepper.
- Cook over medium heat, stirring, for 3 or 4 minutes, until shrimp are pink.
- Sprinkle with lemon juice; stir until hot.
- Serve over pasta; sprinkle with grated Parmesan cheese.
- Pass cheese when serving.
- Serve with a green salad and good, crusty bread.
- Good, fast company meal.
