Ingredients
- Serves 1-2
- 1 minced garlic clove
- 8-10 soft ripe cherry tomatoes
- 4-5 thin slices of scarmoza affumicata
- salt and pepper to taste
- 1/4 cup olive oil
Method
- saute minced garlic in a medium skillet with the olive oil
- add diced cherry tomatoes, stir and cook til soft
- add salt and pepper to taste
- place the sliced scamorza on top of tomato mixture cover and let melt slightly or to taste, once melted ready to serve with a side of toasted bread.
