Ingredients

  • 2 Tablespoons Diced Onion
  • 2 Tablespoons Chopped Baby Bella Mushroom
  • 1 cup Baby Spinach
  • 4 Egg Whites
  • 2 Tablespoons Salsa (optional)

Method

  • 1. In a non-stick pan over medium heat, spray some cooking spray. Once pan is hot then add onions. Cook about 2 minutes until slightly brown.
  • 2. Add mushrooms and cook another 2-3 minutes.
  • 3. Add spinach and cook until it's wilted.
  • 4. Add eggs and stir to scramble and mix with the other ingredients. Add salt and pepper. Remove pan from heat once the egg is cooked to your liking.
