- 1/2 lb. flavored, baked tofu
- 3/4 oz. garlic, chopped
- 2 tsp. olive oil
- 1/2 c. hot water (not boiling)
- 2 tsp. cornstarch
- 2 tsp. soy sauce
- 1 tsp. grated fresh ginger
- 1/2 medium onion, sliced vertically
- 1/3 c. raw cashews
- 1 head broccoli
- 1 medium carrot
- 1/3 red bell pepper
Method
- Slice tofu 1/4 to 1/8-inch thick.
- Cut broccoli florets about 3/4-inch long.
- Peel carrot and broccoli; stalk should be sliced diagonally.
- Cut pepper into 1/2-inch pieces.
