Ingredients
- 6 swordfish steaks
- 6 Roma tomatoes
- 1 chopped red onion
- 2 Tbsp. chopped basil
- 3 Tbsp. olive oil
- 4 Tbsp. balsamic vinegar
- fresh ground pepper to taste
- salt (optional)
Method
- Combine all ingredients, except fish and mix well.
- Cook fish with oil and place on hot grill for approximately 3 minutes each side or until done.
- Don't overcook.
- Top with Tomato Basil Vinaigrette.
