- 6 c. defatted chicken broth
- 2 c. water
- 2 c. carrots, sliced
- 1 large onion, chopped
- 4 c. (packed) green cabbage, chopped
- 2 large tomatoes (2 c.), chopped or 1 pt. can tomatoes
- 2 large white potatoes, cut in chunks
- 1 (10 oz.) box frozen baby lima beans
- 1 tsp. dried Italian seasoning
- 2 bay leaves
- 1 tsp. salt or salt substitute
- 1 Tbsp. sugar
- pepper to taste
Method
- Bring chicken and water mixture to a boil.
- Add onion, celery and carrots.
- Cook 2 minutes.
- Add remaining ingredients.
- Bring to a boil.
- Reduce heat and simmer 20 minutes or until potatoes are tender.
- Discard bay leaves.
