Ingredients

  • 6 c. defatted chicken broth
  • 2 c. water
  • 2 c. carrots, sliced
  • 1 large onion, chopped
  • 4 c. (packed) green cabbage, chopped
  • 2 large tomatoes (2 c.), chopped or 1 pt. can tomatoes
  • 2 large white potatoes, cut in chunks
  • 1 (10 oz.) box frozen baby lima beans
  • 1 tsp. dried Italian seasoning
  • 2 bay leaves
  • 1 tsp. salt or salt substitute
  • 1 Tbsp. sugar
  • pepper to taste

Method

  • Bring chicken and water mixture to a boil.
  • Add onion, celery and carrots.
  • Cook 2 minutes.
  • Add remaining ingredients.
  • Bring to a boil.
  • Reduce heat and simmer 20 minutes or until potatoes are tender.
  • Discard bay leaves.
