Ingredients
- 3 med tomatoes
- 1/2 c. soft bread crumbs
- 1/2 tsp dry leaf basil
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 Tbsp. butter
Method
- Cut tomato in half crosswise.
- Make 4 or possibly 5 (1/4-inch-deep) slashes across the cut-side of each tomato half.
- In a small bowl, combine bread crumbs, basil, salt and pepper.
- Sprinkle on cut-side of each tomato half.
- Dot each with butter.
- To complete now: Preheat broiler.
- Broil crumb-topped tomatoes, 5 to 6 inches from heat, till golden.
- Arrange on platter or possibly serving dish; serve warm.
- To make ahead: Cover with plastic wrap or possibly foil.
- Chill up to 24 hrs.
- Remove cover; broil and server as directed above.
