Ingredients

  • 3 med tomatoes
  • 1/2 c. soft bread crumbs
  • 1/2 tsp dry leaf basil
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp. butter

Method

  • Cut tomato in half crosswise.
  • Make 4 or possibly 5 (1/4-inch-deep) slashes across the cut-side of each tomato half.
  • In a small bowl, combine bread crumbs, basil, salt and pepper.
  • Sprinkle on cut-side of each tomato half.
  • Dot each with butter.
  • To complete now: Preheat broiler.
  • Broil crumb-topped tomatoes, 5 to 6 inches from heat, till golden.
  • Arrange on platter or possibly serving dish; serve warm.
  • To make ahead: Cover with plastic wrap or possibly foil.
  • Chill up to 24 hrs.
  • Remove cover; broil and server as directed above.
