Ingredients

  • 1 kg uncooked medium prawns
  • 40 g butter
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 tablespoon curry powder
  • ¼ cup plain flour
  • 2 cups milk
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon paprika
  • 1 tablespoon sherry

Method

1. Shell and devein prawns, leaving tails intact if desired. Melt butter in medium pan, cook onion until soft. Add garlic, curry powder and flour and stir over heat until onion is coated in flour.

2. Remove pan from heat and gradually add the milk, nutmeg, and paprika, stirring until mixture is smooth. Stir over heat until the sauce boils and thickens.

3. Add prawns and sherry; stir over heat for 2 minutes or until prawns are pink and cooked through.
