Ingredients
- 1 eggplant
- 1 large onion
- Irish potatoes
- 1/2 stick butter
- milk
- cracker crumbs
Method
- Boil eggplant and potatoes; use same amount of potatoes as eggplant.
- Boil until tender.
- Drain and mash. Add butter and milk, enough to make casserole of spreading consistency.
- Add onion.
- Put in baking dish with cracker crumbs on top.
- Bake at 350° for 30 to 40 minutes.
