- one tablespoon chopped garlic
- one tablespoon chopped lemon grass
- two tablesppons virgin olive oil
- one tablespoon lemon skin finely chopped
- one tablespoon honey
- one teaspoon fresh thyme
- one tablespoon soy sauce
- 1/2 teaspoon Cheasapeake seasoning
- salt and pepper to taste
- One large piece of swordfish
Method
- mix all ingredients together making a paste.
- smear on fish 20 minutes before broiling.
- sprinkle with fresh lemon when removing from oven.
