- 2 c. boiling water
- 2 c. chopped potatoes
- 1/2 c. carrot slices
- 1/2 c. celery slices
- 1/4 c. chopped onion
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. margarine
- 1/4 c. flour
- 2 c. milk
- 2 1/2 c. (10 oz.) shredded sharp Cheddar cheese
- 1 (17 oz.) can cream-style corn
- 1 can stewed tomatoes
- 1 can Ro-Tel
- 1 lb. melted Velveeta
- 2 c. cooked rice or more to taste
- 2 to 3 c. chicken stock or more (until desired consistency)
Method
- Add cut up chicken.
- I use about 4 to 5 chicken breasts.
