Ingredients

  • 2 c. boiling water
  • 2 c. chopped potatoes
  • 1/2 c. carrot slices
  • 1/2 c. celery slices
  • 1/4 c. chopped onion
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. margarine
  • 1/4 c. flour
  • 2 c. milk
  • 2 1/2 c. (10 oz.) shredded sharp Cheddar cheese
  • 1 (17 oz.) can cream-style corn
  • 1 can stewed tomatoes
  • 1 can Ro-Tel
  • 1 lb. melted Velveeta
  • 2 c. cooked rice or more to taste
  • 2 to 3 c. chicken stock or more (until desired consistency)

Method

  • Add cut up chicken.
  • I use about 4 to 5 chicken breasts.
