Ingredients
- 24 fresh oysters
- 1 tablespoon chopped fresh dill
- 1 clove garlic, crushed
- 1 tablespoon finely chopped fresh flat-leaf parsley
- 2 teaspoons finely chopped fresh chives
- 2 tablespoons lemon juice
- 1/4 cup (60 ml) extra virgin olive oil chive bows, to garnish brown bread, cubed, to garnish
Method
1. Remove the oysters from the shells and pat dry. Wash the shells, replace the oysters and cover with a damp cloth in the fridge.
2. Place the dill, garlic, parsley, chives, lemon juice and oil in a bowl and season to taste with salt and cracked black pepper. Mix together well, then drizzle a little of the dressing over each oyster.
3. Garnish with chive bows and serve with tiny cubes of brown bread.
