Ingredients

  • 1 12 lbs whole roma tomatoes, unpealed
  • 12 medium onion, cut into chunks
  • 14 cup fresh cilantro, chopped
  • 2 -3 fresh jalapeno peppers
  • 2 garlic cloves
  • 1 12 teaspoons salt
  • 2 -3 tablespoons vinegar (cider or cane)

Method

  • Heat broiler.
  • Place tomatoes on a small baking sheet lined with foil.
  • Broil 15-18 minutes, turning a couple times until soft, skins have split, and there are some dark spots.
  • Allow to cool slightly.
  • Place tomatoes with rest of ingredients in a blender.
  • Puree.
  • Serve warm or refrigerate for later use.
