Ingredients
- 1 lb. fusilli
- 1 lb. shrimp
- 1 can chickpeas
- 3/4 c. pesto
- 4 plum tomatoes
- 1/4 tsp. salt
- 1/4 tsp. Pepper
Method
- Cook fusilli 2 minutes less than minimum time that label directs, stirring occasionally.
- To pasta, add shrimp; cook 2 minutes or until shrimp are opaque throughout.
- Drain pasta and shrimp; return to pot.
- Toss in chickpeas, pesto, tomatoes, and salt and pepper until well coated.
