Ingredients

  • 125 grams precooked or canned puy lentils
  • 6 Queen olives
  • 1 pickled green jalapeno chilli pepper
  • 1 small tomato ,seeds removed
  • 1/2 tbsp mayonnaise (optional )
  • 1/4 tsp turmeric
  • 1 clove minced (crushed) garlic (optional )

Method

  • Either use ready to eat lentils or canned and rinsed lentils , stir in the halved olives and chopped jalapeno pepper, remove the seeds from the tomato, discard the seeds.
  • Chop the tomato into small pieces and add to the lentils
  • Add all the other ingredients and gently stir.
  • Serve on its own, resting on some lettuce, or with pasta or rice and enjoy.
  • This will be enough for two people as a side salad
