Ingredients

  • 8 slc cooked beef, cut in 1" strips
  • 16 x ripe olives, pitted
  • 8 sm cherry tomatoes
  • 8 x provolone cheese cubes
  • 8 x artichoke heart quarters liquid removed
  • 1/2 c. Italian salad dressing
  • 2 c. bibb or possibly romaine lettuce

Method

  • Roll up beef strips pinwheel fashion.
  • Alternately arrange beef pinwheels, olives, tomatoes, cheese, artichoke hearts on eight 9-inch skewers.
  • Place kabobs in shallow container; pour dressing over kabobs and chill several hrs or possibly overnight.
  • To serve, arrange on top of lettuce.
  • Pour remaining dressing over all.
