Ingredients

  • 2 c. uncooked macaroni
  • 1/2 c. skim milk
  • 1 Egg Beaters, beaten
  • 1/4 tsp. salt
  • 1 1/2 c. chunky spaghetti sauce
  • 1 (10 oz.) can Ro-Tel tomatoes
  • 1/4 c. chopped green peppers
  • 1/2 c. chopped onions
  • 1 (8 oz.) can mushrooms
  • 1 tsp. Italian seasoning
  • 2 c. grated low-fat Mozzarella cheese
  • 1/2 lb. ground turkey, cooked and drained

Method

  • Prepare macaroni by package directions.
  • Blend milk, Egg Beaters, salt and add macaroni; mix well.
  • Spread into a 15 x 10-inch baking sheet sprayed with cooking spray.
  • Combine tomatoes with spaghetti sauce and cooked turkey.
  • Spread on top of macaroni.
  • Next, layer the bell peppers, onions and Italian seasoning.
  • Top this with grated cheese.
  • Bake at 350° for about 30 minutes.
  • Let stand 5 minutes before cutting.
  • Serves 10.
