Ingredients
- 1 tablespoon oil
- 1 onion, chopped
- 1 small red capsicum, chopped
- 1 clove garlic, crushed
- 1 teaspoon sambal oelek
- 200 g pork and veal mince
- 1 cup coconut milk
- 2 tablespoons peanut butter
- 1 tablespoon lemon juice
- 2 teaspoons soy sauce
- 8 lettuce cups
Method
1. Heat oil in a large frying pan, add onion, capsicum, garlic and sambal oelek, stir-fry over medium heat for 2 minutes or until onion is soft.
2. Add mince, stir-fry over high heat for 3 minutes or until well browned and almost all the liquid has evaporated. Use a fork to break up any lumps of mince as it cooks.
3. Add coconut milk, peanut butter, lemon juice and soy sauce, bring to the boil. Reduce heat to low, simmer, uncovered, for 5 minutes or until almost all the liquid has evaporated. Remove from heat, cool.
4. Spoon mixture into lettuce cups to serve.
