Ingredients
- 3 eggs, beaten well
- 2 c. sugar
- 2 Tbsp. flour
- 2 Tbsp. corn meal
- 1 (8 1/2 oz.) can crushed pineapple
- juice of 1 lemon
- 1 c. Angel Flake coconut
- 1/2 c. soft butter (1 stick)
- 1 tsp. vanilla
Method
- Beat eggs. Add sugar, flour and corn meal; mix well. Add pineapple and all other ingredients; mix. Pour into unbaked pie shell and bake at 450° for 5 minutes, then at 325° and bake an additional 1 hour. Cool.
