Ingredients
- 1 lb Edamame ( shelled )
- 1 red bell pepper( sliced thin )
- 1 yellow or orange bell pepper
- ( sliced thin )
- 1/2 c. cilantro ( chopped )
- 1/2 tsp. chile pepper flakes
- salt and pepper ( to taste )
- Dressing : 1/4 c. rice wine vinegar ,1/8 c. canola oil
- (1/4 tsp. sesame oil opt. )
Method
- Blanche soy beans in boiling water for 5 mins. Chill.
- Add peppers , cilantro ,chile pepper flakes , salt and pepper. Toss with dressing serve cold.
