Ingredients

  • 1 lg. Romaine
  • 1/2 head Radicchio
  • 2 c. cooked turkey
  • 1 sm. red onion, sliced
  • 1 (11 ounce.) can mandarin oranges, liquid removed
  • 1/4 c. orange juice
  • 1 1/2 teaspoon red wine vinegar
  • 1 1/2 teaspoon poppy seeds
  • 1 1/2 teaspoon extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon white pepper

Method

  • Tear Romaine and Radicchio into small pcs.
  • Place in large salad bowl and add in turkey, red onion and mandarin oranges and toss.
  • In a large jar combine the orange juice, vinegar, poppy seeds, extra virgin olive oil, mustard, salt and pepper.
  • Shake vigorously to mix well.
  • Pour over salad.
  • Toss well to coat all greens.
  • Serve immediately.
