Ingredients

  • 15 oz. container Ricotta cheese
  • 2 eggs
  • 1/4 c. sugar
  • 2 Tbsp. melted butter
  • 1/2 tsp. vanilla
  • 6 oz. pkg. semi-sweet morsels
  • 2 (4 oz.) pkg. graham crackers (mini tart crusts)
  • 2 (11 oz.) cans drained mandarin oranges
  • 1/4 c. apricot preserves

Method

  • Preheat oven to 350°.
  • In large bowl, combine Ricotta, eggs, sugar, butter and vanilla; beat well.
  • Stir in chocolate chips. Spoon 1/4 cup into each crust (mini).
  • Place on cookie sheet. Bake at 350° for 20 to 25 minutes (center will be soft).
  • Cool completely.
