Ingredients

  • 2 Tbsp. oleo or butter
  • 5 c. chopped green cabbage
  • 1 medium onion, cut into halves and sliced
  • 1 c. sliced carrots
  • 1 (15 1/2 oz.) can red beans
  • 1 can stewed tomatoes
  • 1 Tbsp. vinegar
  • 1/3 c. Parmesan cheese
  • 2 Tbsp. flour
  • dash of black pepper
  • 1 lb. Eckrich lite smoked sausage

Method

  • Heat oven to 350°.
  • In Dutch oven, melt butter.
  • Add cabbage, onions and carrots.
  • Saute 5 minutes.
  • Stir in beans, tomatoes and vinegar.
  • Sprinkle cheese, flour and pepper over cabbage mixture. Spoon into greased 2-quart dish.
  • Cut sausage into serving pieces. Arrange on top of cabbage; push down partially.
  • Cover and bake for 40 minutes.
  • Serves 6.
