- 2 Tbsp. oleo or butter
- 5 c. chopped green cabbage
- 1 medium onion, cut into halves and sliced
- 1 c. sliced carrots
- 1 (15 1/2 oz.) can red beans
- 1 can stewed tomatoes
- 1 Tbsp. vinegar
- 1/3 c. Parmesan cheese
- 2 Tbsp. flour
- dash of black pepper
- 1 lb. Eckrich lite smoked sausage
Method
- Heat oven to 350°.
- In Dutch oven, melt butter.
- Add cabbage, onions and carrots.
- Saute 5 minutes.
- Stir in beans, tomatoes and vinegar.
- Sprinkle cheese, flour and pepper over cabbage mixture. Spoon into greased 2-quart dish.
- Cut sausage into serving pieces. Arrange on top of cabbage; push down partially.
- Cover and bake for 40 minutes.
- Serves 6.
